The pros and cons of playing with aging on or off

I learned very quickly that I'd only be able to enjoy this game with aging off. My saves are all set in static, unchanging worlds where I've made all the citizens exactly to my liking. With all the time I've put into those sims, I'd hate to just see them vanish away and die.
