This far I've been playing with aging off, manually trigging their birthdays according to my own time span notes.
With Seasons it is no longer possible to age up elders, so I was forced to change everything. I still play with aging off, but every year on new year's eve, I turn aging on for one day. This way I add realism, and because I only play 7 days seasons, the auto agings don't feel rushing my game. Periodically (say if making a movie or doing a special story/project, even testing new game content) I will skip turning aging on even if the calendar shows new year.
