With the regular updates, it is best to keep to a minimum. Try to consider which mods you really need and which mods are purely to add a bit of flavour. Personally I couldn't do without mccc and more cas columns. I tried UI cheats for a while but didn't like it. It made cheating too easy, to the point where I even accidentally cheated by clicking wrong. I can't play completely vanilla since I discovered mods in the sims 2 era. With the exception of mccc, I don't use any big mods that overhaul entire systems, just a few small ones that each address one specific issue.

That's actually a good idea. I sometimes do this out of necessity after a patch when I wait for mod updates. Some mods I miss right away like mccc and more cas columns. But the ones I barely notice won't be added back in. For example I had mods for extra meal options on cauldrons or more items to create on the woodworking table. These mods were great but I used them so little, it spent more time to update these mods than time actually spent using them in game.
