I second that it's easiest if you pick a job with the work from home option and if your Sim has a high research and debate skill beforehand (makes homework go faster). A full course load with 4 classes makes it grindy and exhausting for your Sim, but it's doable. If your Sim needs a break, they can slack a little on completing the work assignments.
