You can, actually, if you want to make the effort. You would need to visit each household and have them apply to university and then add them each to the same dorm when they move in. You also need to get the timing right so they all move in over the weekend or, when you are switching households, you would lose progress for sims already there.
For ease, I just put everyone into one house before I applied, had them all apply on the same day and then moved them all to uni within minutes of each other (you can only move one at a time so you have to switch back to the original house, move the next one, rinse and repeat).
If you are playing a group, I would avoid doing more than 2 classes each as you may find it overwhelming. Also bear in mind that an elective is pretty much the same amount of work as a class, so if you do 2 classes and an elective that is like doing 3 classes.
I find it best to move to uni Friday night or Saturday and use the first weekend to do all homework, term paper and presentation, then do the next lot of homework as soon as you have completed a class.
Edit: almost forgot, get your sim to 'take notes' whilst they are in a class for better grades.
