I've tried most of the careers that come with base game and the packs I own. I play a rotation of several households, so there's a lot of variety. Have yet to try the criminal career. Also haven't tried owning a restaurant, vet clinic, or business. I recently got City Living so haven't tried that career yet.
With large households, I tend to send one or two sims on the rabbit hole odd jobs from Island Living so I can concentrate on fewer Sims at a time. My favorite active career is the scientist. For rabbit hole jobs, many of my Sims have done the tech career. I like that the hours don't change as Sims get promoted, and they can make a little extra money by creating apps at home.
