I have to have aging on because without it, I get bored. I'm so used to my sims aging, that when it's off I forget to age them up. I use normal aging but with MCCC customization.
I don't really care for challenges except for legacy challenges with a different set of goals for each generation. However, I have never finished a challenge, except the Bachelor/Bachelorette challenge.
I discovered over the years that I like rotational play but I prefer there to be a connection between households, something like one neighborhood or bloodline. I have dabbled with rotating through all the premades but that got a bit overwhelming. That save is on hold until I fully decide what I want to do.
I don't care one way or the other about occult sims. In general, I don't gravitate toward them over regular sims but I don't mind having the option. A lot of it is because I never really knew what to do with them, vampires especially. In my mind, vampires are usually centuries old and would have all the money they need. It feels weird for them to have a normal 9:00-5:00 job. With the other occults, it makes more sense for them to have normal jobs.
As for Neighborhood stories, it all depends on the save. The one I'm currently playing, I'm not rotating between households. They non-played ones can do whatever they want. Father Winter and the Henford-on-Bagley sims have their stories turned off.
That's all I can thing of right now. Sorry for the novel.
