I don't build very much, so most of what I do has to do with gameplay. I usually tend to use the singing skill a lot because I find the bad singing to be hilarious, so City Living is definitely a favorite of mine. Of course, I also love the good singing, but it's just really funny when they sing terribly. I also love the dancing skill from Get Together since you can have a group of Sims all doing a dance at the same time. I find it fun to make a club dedicated to dancing and then having them all dance. I did just get the Vampires pack, so maybe I'll find something fun from that pack too!
Other than that, I mostly use romance interactions with Sims because I like to play as a matchmaker in my games. I like to pair as many Sims together as possible because I just find the romance to be so cute! That's why I really want more romance interactions in the game.
