Unpopular opinion, but I actually quite like both the Mischief and Research & Debate skills. Mischief because it's just the closest thing to an "evil" skill that I have for my morally ambiguous sims, and Research & Debate is a godsend for workaholic students who take four classes per semester because it speeds up homework and presentations.
As for Herbalism, though, I totally agree with everything that has been said. I'd go as far as saying that it's objectively the worst skill in the game because it's expensive (you have to keep paying for trips to Granite Falls to collect insects), a chore to level up (pretty much the only thing you can do to level it up is brew herbal remedies, provided you have the ingredients), and the small (mostly emotional) benefits you get out of it aren't worth the effort. I used this skill for my "witches" before we had actual witches in the game, because those herbal remedies were the closest thing to magic potions we had at the time, but now with Realm of Magic, I almost forgot it even exists.
I'm not a fan of the nature-/plant-related skills in general, to be honest. Flower Arranging is yet another expensive skill (unless you happen to have all the necessary flowers growing on your lot) that has you go through repetitive actions to level up, with the only payoff being emotional moodlets that can easily be produced by other means, but I give it credits for being the only skill in the game that can be used to directly kill other sims (only if they're elders, but still).
Then there's Gardening, a.k.a. taking care of plants that almost never need anything, especially if you put them outside with Seasons installed and they aren't even awake for half of the year. Unless you have a really, really big garden and are faster than the rain when it comes to watering it, even getting to level 4 of this skill can be a challenge. Not because it's hard, but because there's nothing to do. Gardening in TS4 basically does itself most of the time, to a point where I have to wonder why there's even a skill involved at all.
And last but definitely not least on my list of least favourite skills: Juice Fizzing. So useless. If we needed it so bad, I wish it could have been worked into the (also pretty useless) Mixology skill somehow, then maybe Eco Lifestyle would have come with a 5-level Candle Making skill instead, rather than lumping that together with Fabricating. I just don't see the point of Juice Fizzing at all.
