What job should Link have before buying a vet-clinic?

That is a really good idea, only I'm playing a pack challenge and neither DU or GTW are turned on, so those options are unfortunately blocked for me at the moment. But I love the suggestion. 

So that would be option buy the clinic, but pretend one of the employees is the real owner and that he just works there. For story purposes that might work. 

The DU/Doctor combo however is closed to me as the packs aren't active in my save (pack challenge). 

Lots of veterinary students get jobs during vet school that allow them to work with animals. It doesn't have to be in a vet office, some will work as farm vets and will care for farm animals. Maybe he can raise chickens as a means to fund his future vet practice. Or maybe he could work on the animal treats machine and prepare animal treats for sale. Or maybe he could run a cat cafe or dog shelter business. 

I wish there were more pet related jobs in game. I don't have cottage living or any other animal pack unlocked, so farm vet is also out of the question. 

My first thought was Buy Land.  Focus on $$, skills and building your clinic.  Live in a tent?  Might be fun to build the clinic in stages.  Phase 1, the basics. Exam Table / Medicine Crafting Table to skill up.  Phase 2, expansion plan to grow the business.  Phase 3, get fancy.  😆  
Buy the lot size and location that you plan to develop into a home vet business.  Start off ranching with sheep, goats and chickens?  I have earned well on sheep and goats.  I like caring for them.  Chickens, not my favorite activity. You probably understand them better than I.  Experiment with the large animals or greenhouse plants that earn big $$?
Handyperson pays pretty good for part time.   Open basic clinic as soon as possible.

Can a Vet treat their own pets and animals?  I think you can.  Get cat / dog and when they get sick you can skill up.  

Increase your charisma for dealing with future Sim customers?
Handiness, always good.
Pick a hobby for stress relief.

Trying to think of ways you can pretend she is getting experience with the pack limitations in place that are a different option than what's been mentioned.  I know many breeders who have their vet tech degrees.  What if you buy the vet clinic but don't go to the clinic just yet.  She could start out as a dog or cat breeder and as they get sick you treat them with your vet tech skills at home (using the vet bench) until you feel she has enough knowledge to transfer into the clinic as a vet? Another option if you don't like the idea of breeding would be to show dogs or cats and treat them at home as well while building up knowledge and skill treating your champion animals on your own.

How big is the property? Maybe build it on the home lot? 

The Vet that I used to work with (about 30 years ago), took an old Dairy Barn, and transformed it into her clinic. 

It took a while. I remember those early days, when we only had ONE exam room, ONE surgery room, a waiting room (maybe 5 people at most), and a very small kennel room. 

The X-ray room was the size of a broom closet. We were manually developing the X-rays - you just had do everything by "feel" while in TOTAL darkness. Remember which tray had the developer, stop bath, and the rinse off. Then remember where the dry line was and the light switch... ah memories! 

Of course she was able to Expand the clinic in the barn, once she got enough money to do so. She was probably the best veterinarian you could have, since she worked for the love of animals - not the profit.

Build a clinic on the home lot. Do a partial interior build if necessary. You can fill the building shell with more rooms as you get more § § § 😉!
