I turn aging off until I want sims to start aging up, then I set it to short, and then back to aging off when everything is to where I want it to be.
With Seasons, I plan on setting each season to 28 days and turning aging on (too short) only during winter, and then back off at the beginning of the new year. Going to see how that works out for me.
