    Yes, but all the characters that do this--three so far--are NPCs and I'm guessing they're off to work like everyone here suggested.

Try inviting the sim to a different world than the one they work in and see if that works. That tends to work for me, a sim that for example works in Oasis Springs will not disappear if they are invited to a restaurant in San Myshuno.
