I'm a mixologist at the moment but I want to swap to a chef but I don't see an option to. I tried also quitting the career but it just demoted me when I re-picked mixologist and never gave me the option to pick being a chef and the chef career was missing from the list of careers.
chef and mixologist are both branches of the culinary career, if your sim is already a mixologist they are past the point of chosing the branch, they already chose mixologist ( I think it's level 4 or 5).
I would quit job and start in a different career than culinary, then quit that and go back into culinary, I think that way your sim starts at a lower level than 4 again and you can chose the other path when you get to that level.
Or you could use a cheat to cheat them down.
