Option menu options gone and gender buttons gone in cas
OK so I updated my game to the newest February 2018 game patch and I started it up when it was done, I went into cas and the gender buttons in the panel in the top left corner were gone. I went into the options menu to play around with them but all of them were gone except the graphics menu and the exit game menu.

One or more of your CC/Mods is obviously incompatible with the current patch level of the game. Move your CC back in in small batches, testing after adding each batch. When your game is broken again then you have found one or more CC items which are out of date. Remove them from your Mods folder until the creator updates them.
