Playing Sims off of a USB - will it work?

The Sims application and documents folder is taking up the majority of my disk space (I'm playing on a macbook air). I was recommended by a technician to see if I could put it onto a USB and then play it from there so it frees up space. Would this work?

Yes, you can easily move the game to the external then in Origin go to the Application Settings/Preferences > Installs & Saves and change the game library location to the new location. If you're running Catalina you will need to make sure Origin has Full Disk Access in System Preferences > Security & Privacy > Privacy.

For the Sims 4 user data folder it's a little trickier. You will need to create a symlink - https://bluebellflora.com/saving-your-sims-4-folder-to-an-external-drive/
