Instead of deleting a few random corrupted files, manually remaking the Sims 4 folder and adding your Mods back in, please try a completely clean uninstall and reinstall of Origin and the game:
- Uninstall the game via the uninstall option in Origin
- Manually uninstall Origin, full instructions here (don't leave out any files or the app itself) https://bluebellflora.com/how-to-uninstall-origin-on-a-mac/
- Rename or move the Electronic Arts folder currently in your Documents folder
- Empty the trash
- Restart your Mac
- Download Origin from here - https://www.ea.com/origin-for-mac
- Install Origin, making sure to uncheck the automatic updates option at login
- Download just the Sims 4 base game
- Open the game and play for a bit, checking it's working properly and not corrupted
- If the base game is fine, install each pack you have and load the game after each install to once again check it is not corrupted.
- DO NOT add any of your saves, tray files, CC, or any other content from your previous Sims 4 folder into the newly created Electronic Arts > The Sims 4 folder
