Do you have Origin set to launch after you've logged into your Mac? If so set it not to.
You can't open the game in Safe mode so don't bother trying.
Do you use Mods? If so have you tried with a completely new clean Sims 4 folder? https://answers.ea.com/t5/Technical-Issues-Mac/READ-FIRST-Sims-4-Mac-Help-Guides-and-Troubleshooting/m-p/4612394#M163
What surface is your Mac on when you're playing the game?
Could you provide a screenshot of your in-game graphics options? You should be able to do this from the main menu.

Ok. So Origin will of course be shut down after your computer restarts, it would only be open if you had it set to open at Startup.
Can you enable vsync and play in windowed mode to see if it makes a difference? Do you have laptop mode enabled? Scroll further down in the graphic options to check.- 3 years ago
okay so I turned on vsync , windowed mode, and laptop mod and it wasn't freezing but the graphics were still glitching like the first image in my original post.

Almost there! Try resetting the NVRAM to fix the display issue https://support.apple.com/en-gb/HT204063
