EA App - is the client used to enable you to access, download, install and play your EA games. This should be installed on your Mac in the Applications folder.
The Sims 4 game - this is installed wherever you choose to install it as directed in the EA App > Settings > Download.
The Sims 4 user data folder - this is the folder that contains your saves, mods, etc. all the user data that makes your game unique to you.
Please tell me where each of the above 3 is currently located.
Since I have no storage on my computer, all of them are stored in the same place in the current 128 gb external drive.

Ok.
- make sure both drives are plugged in and EA App is closed
- open EA App and change the installation location in EA App > Settings > Download from the 128GB drive to the 500GB drive
- download the game in EA App
- drag and drop the Electronic Arts folder that contains the Sims 4 folder from the 128GB drive to the 500GB drive
- once it has finished copying the Electronic Arts folder trash the symlink in your Documents folder (the folder with the little arrow)
- create the symlink from the Documents folder to the 500GB drive
