Where is the folder called The Sims 4? Because that's where the game loads your data from. I don't see it in your screenshot.
Whatever symlink you created will exist until you either reverse it by entering the correct command in Terminal, or wipe your Mac and reinstall the OS. You can't just move folders around to break the symlink.
You also haven't posted the screenshots from System Preferences, please do so 🙂
@Bluebellflora, this is what it's set at. Oh, it's the one that's called Sims 4 Backup here, I thought I changed that back— or took it out to try to run the game again— before I took the screen shot but it probably didn't save for some reason. I forgot to mention that every time I tried running the game when I had the folder moved out it did create a new one, but in my documents file in the Mac drive. My systems just do not want to works with me right now. I am not super concerned about losing data, I can start from scratch if I have to, I just want to figure it out.

The Sims 4 folder that is being created in your Documents folder should be within a folder called Electronic Arts - Documents > Electronic Arts > The Sims 4. If that is the location then the symlink hasn't been created to store the TS4 folder externally, that's good.
In System Preferences give Origin Full Disk Access.
