I'm curious. Why did you decide to split the mother from the household in the first place just to later re-add her from the gallery? I think the game sees that the child already has a mother and thus refuses to give him an additional mother as you can only have one mother and one father.
It turns out the game had a bug. Today I was able to change her relationships with no trouble at all!
I split her from the household because I wasn't able to change her relationship while she was part of the household, so I was hoping the game would see her as a brand new Sim.
