Immediately following the update I am experiencing an issue when I attempt a dialogue or action with another sim. The first options pop up fine but once I click on "more options" or another sub menu such as "friendly", the whole menu disappears as if I have chosen something. After several attempts I am able to get it to eventually work. I have tried restarting the computer with no luck.
Any help would be awesome!

are you using any mods/cc in your game at all ?
Could you try repairing the game through Origin and see if that helps.
I'm not using any mods. It started happening when using items as well but I noticed if I repair the individual item it begins working . I'll try the repair game option and see if that helps.
If it doesn't help, could you post your Computer's DxDiag?
