So I did a search for "Sims 4" on my PC and found that I did in fact have a backup on OneDrive. My save files and other downloads from the gallery were there! I copied the data over to the Sims 4 folder in my documents/Electronic Arts/Sims4 folder and fired up my game. My Sims are back!!

It has done it every time for the last 4 years. Just a few hours ago I re-designed the entire town. Came back from shower to finish game, after logging back on I find everything gone again. I am getting really fed up paying hundreds of dollars a year for them not to fix this continuous problem!
