It seems that there are stone piles around the jewels (that's what they look like to me). So what I have figured is that you have roughly a 3x3 area where you can find either a stone pile or jewel pile. So if you dig at 3 square intervals you can find where you need to concentrate and dig around. But it remains to be seen if there is any specific pattern or if it is a randomizer that determines where the jewels are.
