Advantages of hoarding are:
-can jump start one or both of the other Acts (which can be useful if you think you will be away/less active during one of the other events) with the new chip colour type
-can maybe use these tokens at a future building (maybe Cletus' Dice Den or Homer's House of Cards use them and pay better rewards)
-gives you more variety of crafting materials later on (the current tokens cannot produce the Martini or Ticket currency)
This is far from definitive until LPN gets all the details, but consider this cautionary advice to maybe not burn all your tokens as soon as you get them. If my assumptions are incorrect, you can always burn these tokens closer to the end of Act I, but until I get the full picture I'm going to start hoarding these.
I'm saving most of mine for now. They should be useful through out the entire event. The store says you can buy them until the end. That said I may have to spend them to keep up with the act prizes since we need over a 100k in chips to finish Act 1.
