Exactly the same issue here but on xbox series s. I have been playing career mode all year and never had this problem until the last update.
Since the last update it keeps crashing. I've uninstalled and reinstalked the game, clean cache, save files, deleted all my previous careers (painful), started several new ones and the issue persists.
There isn't a specific date for the game to crash. Every career crashes exactly on the same date regardless of save file, but different careers crash on different dates. The only commonality I spotted in 4 or 5 different new career atrempts is that it always happens during transfer windows (both summer and january).
