I had the same issue! I don’t play with any mods or custom content, nor do I switch households in the same save. It happened randomly hours into me playing with an household and opening and closing the business, one time I reopened and I saw I had no employees. I thought it was a random bug, rehired my sims and played normally. I saved and exited, I opened the game up just opened my business again and again no employees and now neither of them are showing up in the hire employee screen.
