This is happening on PC too with all painted cats, dogs, and werewolves. I haven't seen it with horses yet but you're the third person besides me to have it. I thought it was a default eye replacement conflicting. It's not.
It happened to 3 of my "calico" cats in the game -- which were not "painted" but created with a standard "coat" selection in CAS. :(
