You put the egg in the coop to incubate, and it will show a timer that it will take two days.
After about a day, the egg will have spoiled.
At this point, if you let your Sim do any cleaning action on the lot and haven't locked the gate to keep them away from the coop, they will follow it up by queuing "throw away" on the spoiled egg.
...and no matter how many times you try to cancel it, it immediately reappears. The action is uncancelable until after your Sim turns the egg to trash.
The only workaround at the moment is to clean the coop, put down plenty of food, put the egg(s) in to incubate and then remove all access to it until the eggs are ready to hatch. If you have a fence, lock the gate for all sims. If you don’t have a fence, add one. The eggs can still hatch after spoiling as long as your sims are unable to access them to throw them out. The rest of your chickens may be mad about the dirty coop by then, depending on how many you have, but at least you’ll have chicks.

I have the same problem. You can try to not clean the coup until it hatches and it still hatches but it's really hard not to get other chickens sad... And I have the same problem at the Finchwick Fair! That products get spoiled while on display...

Ah, so THAT's what happens! I've been trying to figure out why my hatchable eggs that I put in the coop to incubate keep disappearing - this seems like a likely culprit, although I hate to lock the hens in for a couple of days just to hatch a single chicken!

I too am having this problem, I have updated the game to the most recent update and don’t currently have any mods installed. Hoping it gets fixed soon, until then I’m letting my sim throw it away then I purchase a chick and use the money cheat to add back what I spent on the chick.

My Sims keep autonomously throwing away hatchable chicken eggs, especially when they clean the chicken coops.

The weirdest part of this bug is the fact that hatchable eggs never spoil in your inventory, but for some reason are able to once put in a coop. This should either be flipped, or the ability to spoil at all needs to be removed from hatchable eggs.

Another workaround I've found is to make sure the coop is clean before putting in the hatchable eggs, then put them in to incubate. Once they are in, immediately leave the lot to visit a different neighbourhood/world and then go back. They should then be fine and hatch normally without spoiling.
