I have this same/ similar problem.
pc, no mods or custom content. new save. up to date game and game packs. no game packs added or removed during gameplay.
My teen sim got the e-sports scholarship by getting to the top of the high school years computer club thing, and then graduated early. she then joined uni and was actually automatically part of the e-sports club. she got a promotion the the second level. then after the first term of uni (I directly re-enrolled for the next semester, did not change living situation etc) the club/job disappeared.
tried to join again, but it wouldn't even show any of the uni clubs to allow enrolment, I assume because she's a teen. it's also not showing the high school clubs, and my sim still has the trait for graduating early.
