I have fired her several times as the kids are all older now. But every day she shows back up. I have had the dad who originally hired her fire her, the mom, and even the teen daughter. Next thing you know there the nanny is being a pain in the butt by making to much food and interrupting the teens/kids skill time.

This also happened to me - cancelling the service, dismissing her, firing her, going to a different lot and coming back didn't work.
Looking at some Reddit posts from about 4 years ago, someone mentioned that they had the Free Services perk which I also had - maybe this is causing the problem? I ended up splitting my household and moving my sim that hadn't done the hiring to a new location to fix it,
I don't usually use nannies because they'll often cause problems when trying to meet children's needs, but decided to use one while I was trying to run my small business. It was ok to begin with, but became a problem after a few days and then I found I couldn't get rid of them. I also had a butler, cleaner and gardener coming on free services.
I'm also having this issue, it's gotten worse since the newest update
