I forgot to mention yesterday that you can try to recover an earlier save for the family you aged up again, if you want to do so. You may already know how but I'm not sure how new you are to the game. Here is a link to the EA help page to help guide you through the process:

I found a sim in this save I could set up closely to the way I had the simology panel error the last time. Once again, I had the sim use the birthday cake right before leaving for work. The difference from last time was this sim was aging to elder from adult, not from YA to adult. Not trying to bore you with details, just point out it was a different age group.
This sim's panel when she returned home stayed correctly at the elder stage and didn't revert back to adult. I didn't have to take her into CAS to get it to read correctly. In my game, this appears fixed based on results. Traveling right after aging up worked as expected and didn't cause an issue.
