This issue is under investigation now, in the meantime please see Glacier_Snow 's comment below for a potential workaround:
To get color on excisting werewolves, enable cas.fulleditmode and then Shift + click your sim and go to (Modify in CAS).
Then while in CAS, go to nose, select random(randomize nose in the top right), you should notice color appearing on your werewolf again!!
Just go to the ear selection and back to nose and you should see the option to select nose color back to its place!
REALLY don't want to randomise any part of the sims I spent ages making, though. This kind of bug is most aggravating to people who enjoy customising their sims, so randomising as a workaround is... not something I would personally find an acceptable option.

If the sim was edited or created while a bug was present that prevented it from storing this data, there may not be another solution. The game literally doesn't know what to do here until a functioning nose is selected- which can only be done by choosing a preset or randomizing.
