Why am I suddenly being matched with high level players in Apex Legends?

No one but the devs really know what goes on in the matchmaking. People have opinions ranging from "it's completely random" to "the game has pre-determined everything that happens in a match." It would seem likely that the tyruth lies somewhere in the middle.

I did have the same observation as you at a certain point in my leveling. I went from lobbies where everyone's level was low to frequently getting lvl 500 team mates. This change did not come after any sort of noticeable improvement on my part. I think you moved from beginner lobbies to regular ones.
