200 ping in Random games Copenhagen

Hi, I live in Denmark with a rock-solid internet connection running through fiber with 1000 download and 500 upload, and CAT7 cables. With a very solid pc. And I usually get around 10-20 ping. But some games, I just get a consistent 200. This is not my internets fault. I have not seen any issus in any other game than Apex, I have an ambition of getting to Masters this season, but this does not seem achievable with getting 200 ping every other game. It is simply painful to play, which is why I am considering switching games. 
I live in Copenhagen and have tried Frankfurt, Amsterdam and London as datacenters, no difference
