Can't unlink Origin account and Steam account

Seems they have some kind of solution to the issue. I personally contacted them through Apex Legends -> Manage account -> Transfer between accounts. Be sure to use Live chat as your contact method.

@king_gamer_35 Maybe try asking them specifically to remove your persona from your account. There are 3 attachments with my original message that may help you. If not, just keep contacting them until you get someone who will do it. Good luck, fingers crossed 🙂
