Changing emails Cross Porgression

I was wondering if I kept my account information for apex on steam, if I changed the EA email to another one recently. Another question does linking steam and xbox from the same EA account merge them...

Account data is stored on the EA account and not the platform account.

Unlinking your Xbox account would result in you losing the data from your Xbox account.
