Are you currently running any sort of third party software for your DualShock 4? If so, can you try disabling that and repairing Apex Legends in Origin? Start the game back up and leave the third party software disabled Apex Legends should automatically work with your DualShock 4.
Let me know if you're still running into the same issues with your sensitivity afterward.

@EA_Kent i even reinstalled my whole computer and same problem, only sofware on my computer is origin apex and discord. never had any third party software for mye ps4 controller. same problem when i uncap FPS. capped my screen to 144 so the game do the same somehow??? but it works then... still sad to not have 240 when i can

Hmm, gotcha. Do you happen to have any other controllers that you could try using to test and see if the same thing still happens? I'm curious to see if you would still run into that same issue with any other controller as well.

Same thing happens to me on a Xbox one fusion pro controller on a 240hz nvidia g sync monitor.. I was able to capped the FPS at 140 through origin after this issue being game ruining for a year so I missed that much with terrible kill death to where I just stopped playing . But now after being able to play normal for the last several weeks the capped 140 FPS is still saved but iam only getting 60 to 80 FPS all the sudden can’t figure out why .. I want to play on my uncapped 240hz potential but it’s like my controllers can’t keep up and my character spins at different speeds throughout a 360 degree rotation even on the highest sensitivity.. wish this could get figured out .
