In this case, you would need to reach out to support directly so they can help recover and/or update the email on that EA account as needed.
If you unlink any platforms from that account (such as unlinking the Xbox account) it would not transfer your progress, which is stored at the EA account level.
For that reason it would be best to have support update that login information so you're not missing any progress due to unlinking accounts.
If you create a new case here and select Game Support > The EA app > I want to update my EA Account information or I need help logging in to my EA Account, you should be able to get in touch with the support team so they can assist further.
