I had to do two things to solve this issue, I was crashing all the time:
1) Rollback to a 417.XX version of Nvidea drivers. I'm using 417.35 however it looks like 417.71 is also fine.
2) Close Corsair's iCUE software and stop it from running when your PC loads (Right click icon in bottom right -> Bring to Front -> Settings -> Untick 'Start on system startup').
For whatever reason, the iCue software has conflict in my particular setup (i.e Apex + RTX 2080 + iCue).
This fix might not work for everyone but I thought I'd share it as I've been playing over a week now without a crash since doing the above, when previously I was getting super frustrated crashing every 4-5 games..
