I'm having the exact same error when I try to buy the current LOBA Bundle, was this situation solved at any point?

I also just got this error when I bought the Voidwalker Bundle on Xbox.
Oddly enough, I'm getting the red dot indicator telling me I have a new Wraith skin, Wraith frame, and RE-45 skin but when I look at those lists the items aren't there.
I've restarted the game and my Xbox twice and still no skins or frame but still have the indicators and I still have the same amount of Apex Coins I had prior to purchase.
EDIT: Just noticed that the Voidwalker Bundle is meant to cost 2500 Apex Coins according to the official site but it's showing as 3300 Apex Coins for me in game on Xbox One.
EDIT AGAIN: After a hard restart of my console, it's now showing the correct bundle prices in store though I still had the red dot new item indicators but no items. I chanced buying the bundle at the reduced cost and this time it worked!

Same issue here. Tried to buy the Dressed to Kill and Voidwalker bundles. Red dot but no items, no coins taken from my account- just a "server error". Within a minute I was able to buy the Lucky Cat bundle just fine.

Alright so I talked with support and was helped with this pretty quickly. On my end it seems to have been an issue with updated prices and lack of an apex or origin update. The support pointed me here- https://help.ea.com/en-in/help/faq/clear-cache-to-fix-problems-with-your-games/ - and that, alongside an origin restart, worked perfect.
