I found some potential solutions on our Answers HQ on this. While it might not be under Apex Legends the steps might work for multiple games.
Disable any additional overlays.

Make adjustments in your NVIDIA control Panel.

I've been doing everything I thought of and for once I was able to play - played the game without alt-tabbing a single time and the mouse did not appear this time - was able to control aiming with mouse. I played with Discord Overlay turned on. So Discord wasn't the root cause it seems (at least for me). Didn't have time to fault-test it if alt-tabbing would make the issue reappear, will do that another day.
