I have my PlayStation account linked to a separate EA account than I do on my Xbox. My Xbox has all my purchases, but I would like to link the PlayStation to my other EA account. Is it possible to simply unlink & just link it to the other account & not lose progress/purchases?

No, any progress or content unlocks are tied to your original EA account. By unlinking your account you will lose any progress you have gained on that account.
Moving a platform from one EA account to another will provide access to your main EA account content on both platforms, but will not transfer any content from the second EA account.
The saved progress is stored to the cloud linked to your EA account, not the console it's played through. So if you sever the link to that EA account, your ability to access to that data is cut off (it can sometimes wipe the memory completely) - it doesn't carry over with the console when you relink the console to a different EA account.
