Correct, there should be a folder called Battlefield 2042 in Documents. This is where the game settings are stored.
If Battlefield isn't creating the folder perhaps it can't due to file creation permission issues. Have you tried creating a desktop shortcut for Battlefield 2042, then right clicking on the shortcut and run the game as administrator?
Try launcing EA app as administrator as well.
