I've only had time to try one game with this but so far it works. This seems to be the fix to the issue. Thank you so much for finding this out for us @PleasureBot , you're low key a hero. EA being EA per usual giving bad reponses and no real answer.

Even after disabling Steam Input?
When I disabled steam input it just stopped recognizing the controller

Unplug the controller and any devices connected to the USB that you're not using and go to Device Manager (right click the Start button and select it). Click the "View" tab and select "Show hidden devices". Expand the "Universal Serial Bus controllers" section at the bottom and right-click and Uninstall each device that's greyed out. Plug your controller back in and it should automatically reinstall the drivers. If nothing happens when you plug it back in, click on the "Scan for hardware changes" button to force detect it.Launch the game (with Steam input still disabled) and see if it's recognizing the controller.

I’m having the same issue.
how I’m able to play with a controller still isopen the controller configuration settings for your controller
Go to presetsswitch it from game pad to key board and mouse.
then you’ll just have to do some minor key bindings and sensitivity adjustments and you should be good
