Unfortunately, there's not much you can do other than keep trying. The assists don't seem to be counted correctly, as you've mentioned, but the kills will count.
If it helps, I completed this challenge by playing Escalations. I camped out at the borders and only targeted Little Birds and Jets (most of my kills were on jets). Camping out near an AA tank or other people targeting air vehicles should work too, as you might be able to get the last hit and you can use teammates to make the enemy use up their flares.
