Hello. I know the game has some achievements if you complete it from Medium difficulty and above.
Problem is: I switched to Easy to let my gf play for a while. Can I just switch to Medium again and have the achievement when I'll complete the game, or you have to play whole run at same difficulty setting?
If I were you, I’d recommend she play on hard mode. But mainly for the learning curve, in terms of resource management and combat strategy.

Lowering the difficulty would keep that particular achievement from being granted in this case, unfortunately. Typically, lowering the difficulty at all once the game starts would prevent that from showing up.
That said, the game does have a New Game Plus once you beat it the first time. You'd be able to carry over your weapons/suit upgrades, etc., and there's even some additional new or changed content that time around to help keep things fresh. You should be able to run through that on Medium or a higher difficulty to get the achievement if you'd like, made easier by all your (and your gf's) efforts this first run through!
