I finally found a solution for me:
1. Run the EA app once as Administrator
2. Enable 'keep me signed in' and log in
3. Restart the PC
4. Run the EA app as normal user
5. Auto login works :-)
So for me it was 100% a permission issue.
Thanks for sharing this. Hope this helps others!
The moment you open the xbox app and have it connected for EA Play the app will lose it*s login. So the issue lies there
Starting as admin/login will not help.

@RealDadBeard Does the same happen when you try through the EA Ap and not the Xbox App?

Like many ppl, I've had this issue for 2 years now (ever since the EA app was released). I get the same issue with the app forgetting credentials with each shutdown/reboot. I've tried repairing, uninstalling-reinstalling and opening the app as an administrator. Each time there's a reboot followed by opening the XBox app - it'll automatically open the EA app with the login screen again.
Disappointing that this issue still isn't resolved.

What?
I just wrote that the EA app breaks when you open the Xbox app, probably because EA Play is included in Gamepass and starting the Xbox app messes up the login.
If I never launch the Xbox app the EA app always works perfectly fine. Tell your devs to look in this direction and maybe ping Microsoft too as the issue clearly lies somewhere in between.
