Why can’t I personally edit the “Game personas” section?!

Hey there, these are linked personas from other games or platforms. For the platform ones, you can unlink them by following the steps in this article. The game-specific ones cannot be removed. If you wish to, you can reach out to EA Help to see if they can assist you with that, but keep in mind that removing these personas might cause technical issues when accessing the games associated with them.
