EA's servers aren't particularly stable. I've seen the same thing, and have been complaining about it, for months now. I think that the game suffers from a plethora of technical issues:
- Poor server stability; leading to input delay & lag.
- Poor performance caused by EA's anti-cheat. You used to be able to remove the files, repair the game & use an older version of the anti-cheat (not sure why this is a thing - that's a security nightmare), which performed markedly better.
- Lack of seamless transitions between animations, causing odd & very slow transitions irrespective of player stats.
- Generally bad optimisation of aesthetical design choices (strand based hair being the biggest offender).
- Odd physics calculations, which seem tied to server fps. IE the more responsive the gameplay, the more likely you are to see the ball ping wildly off into the distance.
These problems are not new, I just don't think EA have the talent to overcome them.
