It's not necessarily about cutting all passing lanes, but more about where you think they are going to go with the play. Normally clear cut passing opportunities are easy read, but it's sometimes about leading your opponent where you want them to go. I personally play with player switching set to goal side, and right stick switching set to player relevant as it helps me keep better track of who I'm switching to, but that setting is different between players.
As for chip shots, I would recommend getting some practice in with precision shooting, once you get it down it enables you to score a lot of goals that you probably shouldn't. Unfortunately, assisted does not mean guaranteed on target and depending on whether you have the chip shot playstyle or not might make it less effective. Play a some games in kick off, or depending on if you play squad battles to a serious level or not you could use that to adapt. Precision shooting was put in place to be a bit of a skill gap compared to assisted, so it's likely that assisted isn't as useful in most situations. It just takes some time to learn, especially when aiming towards goal in pressure situations.
